The Family Dish: Spring Vegetable and Shrimp Risotto

I’m excited to tell you about a new weekly online feature that my daughter, Adriana, and I (and occasionally the boys in our family) are contributing to The Washington Post’s food blog All We Can Eat. It’s called The Family Dish and it debuts today. In it, we will share some of our favorite family recipes—mostly one-dish meals and dinner entrees that can be made and enjoyed on a busy weeknight, but occasionally we’ll post about other favorites, such as a dessert or brunch recipe that we all love, or something a little more elaborate for a weekend cooking project. We hope that you will also share some of your favorite family dish recipes with us. Click on the link below to check out our first post, where you will also find our first Family Dish recipe: Spring Vegetable and Shrimp Risotto. Buon Appetito!

Hi Domenica. Love this recipe. How old were your kids when they actually began enjoying it? I fear the 8-year-old and the 5-year-old in my house are not yet adventurous enough to give this a shot.

This is a more recent development–though they’ve been eating risotto for quite a few years now. If you think they won’t like the chard you can leave it out and stir in some frozen peas during the last few minutes of cooking. Or, leave out the shrimp and stir in cheese (my kids loved cheesy risotto when they were little). Give it a try Liz!

Congrats! What a great feature. And of course, yum to the risotto. Natch.
